A pizzeria where simple dough—flour, water, salt, and yeast—is carefully prepared on site and baked in a blazing oven reaching 550°C. Original yeast cultivated in “PAN: 013 The Fermenting Lab” is also used for the pizza dough. By layering ingredients, fermentation, and heat, we continue to pursue the ideal balance—offering pairings of food and fermentation unique to this place, to be enjoyed at your own pace.
