ベレーダ農園はブラジルのセラード地区で、比較的水源が豊かで緑の多い場所にあります。ここは、ブラジルスペシャルティーコーヒー協会(BSCA)の初代会長デイビッド・オットーニ氏が1987年にコーヒー栽培を始めた農園で現在は三男のカルロス・オットーニ氏が後継者として管理しています。農園主は親日家で日本との関係も深く、日本で有名な農園の一つです。
ブラジルの一般的な精選方法は、機械で果実を収穫し、収穫された果実をそのまま乾燥をさせるので、未熟も過熟も全て混合して分からなくなった状態になってしまい、結果として未熟の混入が多くなり味にバラつきが出るといわれています。このアイテムは、熟度を均一にするために収穫したチェリーを水を使って選別し、長年の経験に基づく管理方法により、バラつきの少ない美味しさを作り出しています。

グアテマラの伝統的なコーヒー生産地区で有名なアンティグアにあるラフォリー農園。しかし、2000年ごろまでほとんど管理がされておらず、荒廃した状態でした。この農園を所有しているフランス人のペニー姉妹が、農園を復興させるため、その地域で長年コーヒー生産に取り組んでいるルイス・ペドロ・セラヤ氏に農園管理を委託。彼が農業やコーヒー栽培の勉強に励み、自身の知見に基づき農園の立て直しに成功。現在では農園管理者として農園の経営、管理を受け継ぎながらも、豊富な知識と経験を活かしたコーヒー生産に取り組んでいます。
その一つとして行っているのが、コーヒーの木と一緒にシェードツリーを植え、その木陰を活かしたコーヒー栽培です。シェードツリーは直射日光に弱いコーヒーの木を日差しから守り、土壌の湿度を適度に保ち、落ち葉は肥料となる利点があります。彼はきっちりと区画分けした管理を行い、周囲の火山がもたらした豊かな土壌とシェードツリーを活用して、高品質なコーヒーを生産しています。

タデGGは標高2,000mを超えるオロミア州グジ地区シャキッソ村に位置しています。このシャキッソ村は、昔大きな山火事で森林が焼失し、ごくわずかな森林と広大な土地だけが残った場所であり、地域復興への強い意志を持ったタスファイ氏がコーヒー生産に取り組みはじめました。たゆまぬ努力の結果、自然環境の復活と地域住民の経済持続的発展へのサイクルが生まれています。
タデGGのコーヒーは、農園主で農学者でもあるタスファイ氏の情熱と復活した豊かな自然が育んだ努力の結晶です。また、タスファイ氏はコーヒー生産を持続可能にするためには収穫後の品質管理も重要と考えています。農園の近くに保有する精選所で、収穫したコーヒーを全て水槽を使って選別、選別されたコーヒーは、アフリカンベッドの上で乾燥、その際丁寧にハンドピックし、熟度の高い果実だけを脱殻する管理を実施しています。

Vereda Farm is located in the Cerrado region of Brazil, in an area with relatively abundant water source and greenery. This farm was found by David Ottoni, the first president of Brazil Specialty Coffee Association (BSCA), and is currently managed by his third son, Carlos Ottoni. The owner is very friendly towards and have a close relationship with Japan, and as a result, this is one of the most famous coffee farms in Japan.
The general method of processing coffee in Brazil is natural where coffee cherries are harvested by machines and dried without sorting. As a result, both immature and overripe cherries are mixed, creating inconsistency in taste. At Vereda, however, they use water to sort the harvested cherries for uniform ripeness and apply management methods learned over the years to create a consistent and delicious taste.

La Folie Farm is located in Antigua, a region famous for traditional coffee production in Guatemala. This farm, however, was in a state of devastation with very little management until around the year 2000. The French owners of the farm, the Penny sisters, wanted to revive the farm and entrusted the management of the farm to Luis Pedro Zelaya who had been involved in coffee production in the area for many years. He succeeded in rebuilding the farm by studying agriculture and coffee cultivation and building on his own knowledge. Today, he continues to operate and manage the farm, drawing from his wealth of knowledge and experience.
One of the things he focuses is the planting of non-coffee trees between coffee plants to create shade for an optimum coffee production. Shade trees not only protect coffee plants from direct sunlight, but also help maintain moisture in the soil and their foliage become fertilizers for the coffee plants. He manages each plot of the farm neatly, and takes advantage of the rich soil from the nearby volcanoes and the shade trees to produce high quality coffee.

Tade GG is located in Shakisso Village in the Guji region of the Oromia state at an elevation over 2,000m. The Shakisso village experienced a large wildfire that destroyed its forest leaving just a small portion of the forest and a vast land. The production of coffee on this land was started by Mr. Tesfaye with a strong will to revive the region. As a result of his tireless effort, he brought back a cycle of forest restoration and sustainable economic development to the local residents.
The coffee from Tade GG is the result of Mr. Tesfaye's passion and the richness of the revitalized natural environment. Mr. Tesfaye is not only the owner but also an agronomist and believes that to make coffee production sustainable, they must focus on the post-harvest quality control. All harvested coffee is sorted in a water tank at the near by washing station, then they are dried on African beds where they are also hand sorted leaving only the ripe cherries to be milled.
